At Stuttgart Airport there is one runway with west-east direction (07/25). The biggest airline is Germanwings because they have a hub at STR. Most airplanes are from german airlines like Germanwings, Air Berlin, Condor and TUIfly. Long haul flights to the USA are flown by Delta Airlines (Atlanta) with a Boeing 767 and (until 20th September 2014) United Airlines (Newark) with a Boeing 757. Furthermore Air Berlin will fly to Abu Dhabi from December 2014 with a Airbus A320.
Through the summer months you will be able to see some charters like e.g. Air Bucharest, Corendon or Travel Service as well as widebody aircraft from Turkish Airlines and Air Berlin (Airbus A330/340 and/or Boeing 777).
In the winter months (December/January to April) some freight-charters are flying to Stuttgart. Mostly they use Boeing 747F or McDonnell Douglas MD-11F .
You can look here for arrivals and here for departures.
There is a flightplan from the Aviation Community of Stuttgart updated with regularity.
Here you can take a look at it.

For most of the positions a lens with 70-300mm is enough. At position 1 you may use something between 18mm and 300mm depending on what kind of picture you want to take. At position 2 you will need something between 18mm and 300mm for narrowbodies and less than 18mm for widebodies.
